There's a new utility on the market called WireTap Pro from Ambrosia Software Incorporated.

Touted as "your all-purpose digital recording device," WireTap Pro can record sound from any device or running application on your system. The recordings can be saved as MP3, AAC, QuickTime, and AIFF files. Additionally, the program can use presets to automatically save files from different sources as different file types. And its integration with iCal means you to set record times for streaming content and leave the program unattended.
